    What are some risks associated with outsourcing? I assume when you allow someone to work on your site, you must give them administrative privileges, leaving your site vulnerable, etc?

    good points there. You can give them secondary logins, or you can get them to install it on a test domain first.

    Normally using escrow does the trick, you pay once you are happy and then change the passwords etc.
